
About this coffee
Decaf Colombia El Buho comes from smallholder farmers in the Huila and Tolima regions of Colombia, known for producing clean and expressive washed coffees. After traditional washed processing, the coffee undergoes the Ethyl Acetate, or “sugarcane,” decaffeination method.
This process combines high-mountain spring water and Ethyl Acetate (EA) of natural origin. EA is present naturally in every coffee cherry, as well as in many other fruits and vegetables, and in this method it is obtained through a sugarcane-based process. These two elements—spring water and natural EA—are the only materials that come into contact with the coffee.
First, the beans are steamed to open their pores, then they are rinsed with Ethyl Acetate repeatedly to remove the caffeine. They are dried to 10–12% humidity and sealed with a natural wax that has a neutral profile and does not affect the flavor or aroma. This water-EA process allows for gentle caffeine extraction without excessive heat or pressure, maintaining the natural structure and characteristics of the coffee bean.
